Liuzhou Luosifen

Liuzhou Luosifen, also known as River Snail Rice Noodles, is a world-famous snack rice noodle in Liuzhou City, Guangxi Zhuang Autonomous Region, with the unique flavor of spicy, cool, fresh, sour and hot. It is the most famous local snack in Liuzhou. The unique soup makes the River Snail Rice Noodles more delicious. The soup is made up of natural spices such as river snail, rhizoma kaempferiae, star anise, cinnamon, cloves, various kinds of chili. August 20, 2018, "Liuzhou River Snail Rice Noodles " won the national geographical indication trademark.



 

Historical Origin

The Luosifen first appeared in the late 1970s. Although the history is short, the snail and rice noodles have a long history in Liuzhou. Liu Wen, who has been engaged in archaeological work for more than 40 years in Liuzhou, believes that from a small perspective, the historical and cultural development of Liuzhou is a history of collecting and eating snails.
 

There are many different opinions about the origin of snail powder, but almost every legend has a strong "snail complex" and "rice noodles complex." In 2008, Liuzhou snail noodles handicrafts successfully declared the second batch of intangible cultural heritage in the Guangxi autonomous region. Huang Xiaoping, who was in charge of the application for the World Heritage, wrote in the declaration: "The snail noodles made by combining rice noodles and snails is a major creation of Liuzhou folk. Its unique traditional craftsmanship is a valuable intangible cultural heritage of Liuzhou."

 

Materials
 

  • Main Ingredients: rice noodles (can also use dry cut noodles), snails, yuba.

It is made up of Liuzhou's unique soft and refreshing rice noodles, with sour bamboo shoots, peanuts, fried yuba, day lily, dried radish, fresh vegetables and other ingredients, as well as a combination of rich moderate sour and spicy taste and boiled snail soup.
 

Because of the strange and delicious snail soup, people can’t stop thinking about it. Red is a layer of chili oil floating on it. The green is seasonal green vegetables. The delicious snail soup penetrates each noodle. The chili oil in the snail noodles is different from the ordinary spicy.
 

The reason why Luosifen is called "snail noodles" is because its soup is made of snails. Outsiders may not be accustomed to the spicy and smelly taste of snail noodles soup, which is precisely the biggest feature of snail noodles. The carefully-made snail soup has a unique flavor that is clear but not light, spicy but not hot, fragrant but not greasy.
 

The authentic Liuzhou Luosifen will carry a thick and weird "smelly" taste. This "smelly" taste comes from the acid bamboo shoots in the snail noodles, which is acidified by the fresh bamboo shoots after fermentation.
