If you only hope to adding some multi day treking in China countryside into a typical china tour. I suggest you go the route like Beijing-Xian-Guilin-Shanghai.
In Beijing, you could some typical tours to visit the highlights, such as Tiananmen, Forbidden City, Summer Palace, Temple of Heaven, ect. Then you could choose to have one day treking from Mutianyu Great Wall to Jingshanling Great wall or from Mutianyu Great Wall to Gubeikou Great Wall to see the different view of Great Wall and avoid too many tourists in the typical section of the Great Wall.
In Xian, the tour will be typical to see the Qin Terracota, Shannxi History Museum, Grand Mosque and Muslim Street. But you could have a biking tour on Ancient City Wall instead of visiting it ordinarily.
In Guilin, you could try more treking in the rural area. As you know, Guilin is famous for its landscape, waters and hills. You could choose to Longji Terrace Fields treking from Jinkeng (Dazhai Village) to Ping An Village to enjoy Southern China countryside view.
Then you could also try a day treking along Li River from Yangdi to Xinping. Then you will feel that you are walking in a piture.
If you are energetic, you add half day biking tour or hiking tour in the countryside of Yangshuo to see a real and local China.
Then fly from Guilin to Shanghai and finish your China tour from this mordern city.
Shanghai tour will be a typical one. You could also rent a bike and ride along the back street or lane in Shanghai to see the local people’s life.
